Baileys Cheesecake with Killinchy Gold Pure Vanilla Ice Cream

Ingredients:
750g cream cheese
3 eggs (room temp)
2 Cups wine biscuit crumbs
2 Tablespoons flour
1/3 Cup melted butter
1 Cup Baileys
1/2 Cup Sugar
1 Tablespoon vanilla
1 Cup white chocolate grated
Method:
Preheat oven to 180 degrees C
Combine crumbs and butter in bowl. Press into pan
Bake in oven for 5 mins. Set aside
Cream the cheese and sugar
Beat in eggs, flour, baileys, and vanilla until smooth
Pour mixture onto crust. Bake for 40 minutes
Turn off oven and leave cheesecake in oven for 15 minutes
Remove and let cool. When cool, sprinkle white chocolate on top
Refrigerate overnight
Serve with Killinchy Gold Pure Vanilla ice cream
