Baileys Cheesecake with Killinchy Gold Pure Vanilla Ice Cream

Ingredients:


  • 750g cream cheese
  • 3 eggs (room temp)
  • 2 Cups wine biscuit crumbs
  • 2 Tablespoons flour
  • 1/3 Cup melted butter
  • 1 Cup Baileys
  • 1/2 Cup Sugar
  • 1 Tablespoon vanilla
  • 1 Cup white chocolate grated


Method:


  • Preheat oven to 180 degrees C
  • Combine crumbs and butter in bowl. Press into pan
  • Bake in oven for 5 mins. Set aside
  • Cream the cheese and sugar
  • Beat in eggs, flour, baileys, and vanilla until smooth
  • Pour mixture onto crust. Bake for 40 minutes
  • Turn off oven and leave cheesecake in oven for 15 minutes
  • Remove and let cool. When cool, sprinkle white chocolate on top
  • Refrigerate overnight
  • Serve with Killinchy Gold Pure Vanilla ice cream
