Killinchy Gold Layered Lemon Curd Dessert

 

Ingredients

  • 1 litre Killinchy Gold Lemon Curd ice cream
  • 1 packet superwine biscuits 
  • 1 cup desiccated coconut 
  • 30g melted butter 
  • 1 teaspoon lemon zest 
  • 250ml fresh whipped cream 

Method

  1.  Blend the superwine biscuits, coconut, butter and lemon zest together. 
  2. Fill the glasses with half of this crumb mix. 
  3. Add a layer of Killinchy Gold Lemon Curd ice cream 
  4. Add a third layer of whipped cream
  5. Finish the final layer with the crumb mix. 
  6. Follow the instructions below to make the topping. 

Ingredients

  • 2 egg whites
  • 1/3 caster sugar 
  • 1 teaspoon lemon juice 

Method

  1.  Beat the egg whites until soft peaks form. Then add 1 dessert spoon of castor sugar at a time, until mixture is thick and glossy. 
  2. Finally, beat in the lemon juice.
  3. Pipe the topping on top of the layered dessert. 
  4. Serve with Killinchy Gold Lemon Curd ice cream.
