Killinchy Gold Valentines Ice Cream Cake Sandwich

 

Ingredients

  • 1 x half litre Killinchy Gold Pure Vanilla Ice Cream
  • 1 x square ready made sponge
  • 1 x round ready made sponge
  • 250ml fresh cream
  • 250g chopped Dark Chocolate (we recommend Whittaker’s Dark Ghana chocolate)

Method

  1. Pour cream into saucepan and heat gently until bubbles form around the edge of the saucepan.
  2. Remove saucepan from heat and add chopped chocolate.
  3. Stir with a whisk until silky smooth.
  4. Pour ganache into a bowl and place in the fridge to thicken.
  5. Cut the circle sponge in half to create two half circles, then slice each half circle sideways to create a top and bottom.
  6. Slice the square sponge sideways to create a top and bottom.
  7. Spread the softened ice cream over the bottom pieces of shaped sponge and place the other half of the sponges on top like an ice cream sandwich.
  8. Arrange the sponges into a heart shape and pour over the ganache when it has thickened.
