Flourless Orange Cake with Killinchy Gold Chocolate Fudge Brownie Ice Cream

  • 2 large oranges
  • 6 eggs
  • 200gm caster sugar
  • 250gm ground almonds
  • 1/4 tsp salt
  • Killinchy Gold Chocolate Fudge Brownie ice cream


  • Cover oranges with water in a large saucepan and bring to the boil before turning down to simmer for 1 hour
  • Top up water as necessary then let oranges cool
  • Preheat oven to 180 C, grease and line 20cm cake tin
  • Whisk eggs with caster sugar until light and foamy
  • Quarter oranges and pulse to a coarse pulp in food processor
  • Add remaining ingredients and process until blended
  • Pour into tin and bake for 50-60 minutes or until a skewer inserted comes out clean
  • Let stand for 10 minutes then turn out of tin onto cooling rack
  • Garnish if desired with mandarin segments and a dusting of icing sugar
  • Serve in wedges with scoops of Killinchy Gold Chocolate Fudge Brownie ice cream. Delish
