Raspberry and White Chocolate Tiramisu with Killinchy Gold Manuka Honey & Almond Ice Cream

  • 2 eggs separated
  • 150g icing sugar
  • 350g mascarpone cheese
  • 6 tbsp milk
  • 125ml Baileys or other creamy liquor
  • 20 lady fingers biscuits
  • 1/3 block Whitaker's White Chocolate
  • Slivered almonds
  • Raspberries


  • Mix egg yolks and icing sugar in a food processor or with a hand held beater until thick
  • Add mascarpone gradually until combined
  • Whisk the whites separately and fold into marscapone mix
  • Pour milk and baileys into a bowl and dip (just to soften) ladyfingers
  • Arrange half the ladyfingers in a rectangle serving dish (lasagne dish works well) and spread 1/3 of mascarpone mixture over top scattering with slivered almonds, raspberries and slivered or grated white chocolate
  • Top with remaining mixture and raspberries white chocolate and almonds to garnish
  • Set in fridge overnight for at least 2 hours
  • Serve with Killinchy Gold Manuka Honey & Almond ice cream
