Killinchy Gold Layered Lemon Curd Dessert
1 litre Killinchy Gold Lemon Curd ice cream
1 packet superwine biscuits
1 cup desiccated coconut
30g melted butter
1 teaspoon lemon zest
250ml fresh whipped cream
Blend the superwine biscuits, coconut, butter, and lemon zest together.
Fill the glasses with half of this crumb mix.
Add a layer of Killinchy Gold Lemon Curd ice cream
Add a third layer of whipped cream
Finish the final layer with the crumb mix.
Follow the instructions below to make the topping.
2 egg whites
1/3 caster sugar
1 teaspoon lemon juice
Beat the egg whites until soft peaks form. Then add 1 dessert spoon of castor sugar at a time, until the mixture is thick and glossy.
Finally, beat in the lemon juice.
Pipe the topping on top of the layered dessert.
Serve with Killinchy Gold Lemon Curd ice cream.
