Killinchy Gold Valentines Ice Cream Cake Sandwich



  • 1 x half-liter Killinchy Gold Pure Vanilla Ice Cream
  • 1 x square ready-made sponge
  • 1 x round ready-made sponge
  • 250ml fresh cream
  • 250g chopped Dark Chocolate (we recommend Whittaker’s Dark Ghana chocolate)


  • Pour cream into saucepan and heat gently until bubbles form around the edge of the saucepan.
  • Remove saucepan from heat and add the chopped chocolate.
  • Stir with a whisk until silky smooth.
  • Pour ganache into a bowl and place in the fridge to thicken.
  • Cut the circle sponge in half to create two half circles, then slice each half-circle sideways to create a top and bottom.
  • Slice the square sponge sideways to create a top and bottom.
  • Spread the softened ice cream over the bottom pieces of shaped sponge and place the other half of the sponges on top like an ice cream sandwich.
  • Arrange the sponges into a heart shape and pour over the ganache when it has thickened.
